Connecting the Ledbury's guests with fungi by demonstrating that mushrooms can be the food you eat, as well as furniture.
The restaurant features mycelium cladding panels, framed beautifully with brass edging, as well as mycelium lightshades and decorative serving bowls, showing off mycelium's natural ability to produce unique and wild textures.
Brett Graham, head chef, envisioned an experience of both food and materials. The concept also included a mushroom incubation fridge by Bristol Fungarium where guests could select the mushrooms they would like to be cooked as part of their tasting course.
Completed in 2022 in collaboration with These White Walls and the Bristol Fungarium.
